Coffee is the lifeblood of of our existence. Breakfast might be the most important meal of the day, but, in our opinion, that’s just because it involves coffee. So when we got the chance to sit down with Sellia Georges, the Owner of our favorite French-inspired cafe, Cupitol Coffee & Eatery {VISIT}, our coffee-loving hearts jumped at the chance. She comes from a food family, but she’s putting her own twist on the breakfast game with her cafes…
How did your time in Europe influence your dream for Cupitol?
I wanted to open an all-day easy going café that offers our guests an experience from day to night, combining great coffee, quality and quick service dining.

How did you move from this idea to actually opening your first location?
Along with my father and uncle who are experienced restaurateurs who have owned Elly’s Brunch + Café (formerly Elly’s Pancake House) for more than 20 years, we agreed that the Evanston space was perfect and allowed us to keep the vision of Cupitol as we saw it. The size is extremely suitable and Evanston is a perfect combination of urban, business and families. A perfect fit for our all-day lounge concept.
What is something no one tells you about opening a business?
You’re never ready to open; you just have to go for it.

How was expanding to your second store different from opening the concept initially?
I was less stressed with opening in Streeterville because of the success we had in Evanston. It was very well received which led to more structure and we knew what to expect.

What are some of your favorite menu items?
Anything with espresso! Our Avocado Wrap if a great breakfast pick-me-up. From our dinner menu, I love the Wild Mushroom Alfredo with the Cupitol Passion Cocktail for summertime!
How do you decide on and work with your partners and sourcing companies?
We always go as local as possible. It’s important to us to build relationships with family-owned partners as well that offer great quality.

What is the best advice you’ve ever received?
You can’t please everyone all the time!
What advice would you give to your 16 year old self?
When you people give you feedback or advice, take the positive and filter the negative.
How do you balance your personal and professional life?
It’s difficult sometimes! I love working in Chicago and don’t like taking time off in Chicago. My time off is mostly spent over the summer in Greece with friends & family. But even when I’m there, I’m constantly brainstorming new ideas and experiences to bring to Cupitol.

What is your favorite part of the Chicago food world?
It’s so diverse! There are so many options for great, reliable service.
What do you like to do in Chicago when you’re not working?
Exercising! I love bike riding outside and taking long walks by the lake. I enjoy yoga after a long day, exploring coffee shops and keeping up with the latest movies.
